
Swiss Enchiladas: A Delicious Way to Treat Mom

Ingredients
- 2 cooked and shredded chicken breasts
- 1 small bunch fresh cilantro
- 1 cup sour cream
- ½ cup milk
- 1½ cups shredded Manchego or Chihuahua cheese
- 8 tomatoes, peeled and chopped
- 2 serrano peppers, optional
- ½ onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 2 teaspoons powdered chicken bouillon
- ½ teaspoon salt
- 8 corn tortillas
- Oil for frying
Instructions
- Place the tomatoes and serrano peppers in a pot of water and cook over medium heat.
- Heat the olive oil in a large skillet. Sauté the onion and garlic over medium heat until golden.
- Blend the tomatoes, serrano peppers, onion, garlic, cilantro, and powdered chicken bouillon until smooth.
- Pour the sauce into the skillet, then add the milk and sour cream.
- Cook over medium heat for approximately five minutes, or until the sauce thickens.
- Heat a little frying oil in a separate skillet and lightly fry each tortilla on both sides.
- Fill each corn tortilla with shredded chicken and roll it up.
- Arrange the enchiladas in a baking dish. Cover them with the sauce and shredded cheese.
- Bake at 350°F (180°C) for approximately 10 minutes, or until the cheese has melted.
- Serve the Swiss enchiladas hot with your favorite toppings.
- If desired, garnish them with sour cream, fresh cilantro, red onion, and avocado.
