Ingredients:

For the cupcakes:
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
For the frosting:
  • 1 stick unsalted butter, at room temperature
  • 2 1/2 cups powdered monk fruit sweetener or powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt.

Preparation:

  • Preheat the oven to 350°F (180°C) and line a mini cupcake pan with cupcake liners.
  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the butter and sugar until smooth and fluffy.
You can use an electric mixer or do it by hand with a wooden spoon.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract until well incorporated.
  • Gradually add the flour mixture in three parts, alternating with the milk.
  • Begin and end with the flour mixture. Mix just until the ingredients are incorporated.
  • Fill each cupcake liner about 2/3 full with the cupcake batter.
  • Bake in the preheated oven for approximately 18-20 minutes or until the cupcakes are golden and a toothpick inserted into the center comes out clean.
  • Remove the cupcakes from the oven and let them cool completely on a wire rack before decorating.
  • While the cupcakes cool, prepare the frosting. In a large bowl, beat the butter until smooth and creamy.
  • Gradually add the powdered monk fruit sweetener or powdered sugar, alternating with the heavy cream, until you reach the desired consistency.
  • Stir in the vanilla extract and continue beating until the frosting is smooth.
  • Divide the frosting into three equal parts in separate bowls.
  • Add a drop of purple food coloring to one bowl, a drop of turquoise food coloring to another bowl, and leave the third bowl of frosting white.
  • Place each colored frosting in a separate piping bag to apply three colors.
  • Once the cupcakes are completely cool, decorate them with the frosting.
  • You can add sprinkles, pearls, or any other adornment you desire.

And voilà! You now have perfect cupcakes for a “The Little Mermaid” themed party!

Enjoy your delicious homemade Mini Mermaid-Inspired Cupcakes!

Tips:

  • Ensure that the butter and eggs are at room temperature before starting. This will help them mix more smoothly and blend better with the other ingredients.
  • Sifting the flour, baking powder, and salt will help eliminate any lumps and aerate the dry ingredients, resulting in lighter and fluffier cupcakes.
  • Avoid overmixing the batter, as this can develop the gluten in the flour and make the cupcakes dense.
  • Fill the cupcake liners approximately two-thirds full to leave space for the batter to expand during baking.
  • Be sure to preheat the oven to the temperature indicated in the recipe. This will ensure that the cupcakes bake evenly and achieve a smooth texture.
  • To check if the cupcakes are ready, insert a toothpick into the center of one of them. If it comes out clean or with a few crumbs, they are ready.
  • If it comes out with raw batter, leave them in the oven for a few more minutes.
  • Allow the cupcakes to cool completely before applying the three-color frosting. This way, the frosting won’t melt and will stay in place.
  • To achieve a three-color effect in the frosting, you can use a piping bag equipped with an adapter to create the desired effect while decorating.

Happy baking, and enjoy your journey to the sea with each delightful bite!
