Honey Mustard Chicken Tortilla Cups

Ingredients
- 6 flour tortillas
- 2–3 boneless, skinless chicken breasts, preferably cut into strips
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper to taste
- Cooking spray
- Shredded lettuce, washed and dried
- Shredded cheese
Equipment
- Muffin pan
- Pot or skillet with a lid
Instructions
- Preheat the oven to 350°F (180°C).
- Warm the tortillas on a griddle or in the microwave until soft and flexible.
- Coat the muffin pan with cooking spray.
- Place one tortilla inside each muffin cup. Press it down gently and fold the edges as needed to form a basket shape.
- Bake for approximately eight minutes, or until the tortilla cups are lightly golden.
- Remove them from the oven and allow them to cool for a few minutes before filling.
- In a small bowl, combine the Dijon mustard, olive oil, and honey.
- Coat a skillet or pot with cooking spray and heat it over medium-high heat.
- Add the chicken and season it with salt and pepper.
- Cook for six to seven minutes on each side, or until the chicken is fully cooked and lightly golden.
- Pour the honey mustard mixture over the chicken. Reduce the heat to medium-low and cover the skillet.
- Cook for another 10 minutes, stirring frequently to prevent the sauce from burning.
- Shred the chicken and divide it among the tortilla cups.
- Top each cup with shredded lettuce and cheese.
- Serve the tortilla cups over a bed of lettuce.
